Chermoula (a Moroccan herb marinade used for fish) is unbelievably easy and quick to make and makes such a statement of freshness and flavour to the taste.All pocketed up in a parchment paper parcel with the fish, chickpeas, red peppers and red onion to create a really healthy supper, and they look so good to served up in the parcels. If you are looking for something to serve with them, they I would suggest basmati rice and grilled chard or broccoli.
