Add a bit of sunshine to a chilly, wintery week. It’s also deliciously moist with wonderful hints of cinnamon and nutmeg spices, and a dreamy creamy orange blossom frosting — utter heaven.
The flavors of the herbs and hazelnuts roasted along with the lamb cutlets are utter heaven here, but you could use almonds or pine nuts instead if you prefer. You can prepare the pea and wild garlic purée ahead in the morning, along with the lamb cutlets right up to the stage of putting them in the oven.
The delicate peppery taste of the pea shoots alongside the crispy smoky pancetta, sweet peas and creamy goat’s cheese is divine – or try using watercress instead. The dressing lightly scented with orange is my favourite with this salad, but if you are fonder of a lemon dressing, then simply replace the orange with a lemon. I recommend doubling up the dressing recipe, as it will last for up to two weeks in the fridge.

Quick 30 Minute Suppers
If you grow your own vegetables, you probably grow spinach and therefore have an abundance of it for a lot of the year! This is one of my favourite dishes to make when I want an easy warming bowl for supper and it is made with storecupboard staples – red lentils, chickpeas and coconut milk, and a few simple spices. If it starts to get a bit dry, add in hot vegetable stock or water.
Easy Homemade Breads
It’s the bread that’s always on my kitchen table at home — I make it every Saturday morning. It’s similar to the traditional Irish soda bread, but made with yoghurt and rosemary. Thyme makes a lovely substitute, or herbs can be left out altogether.
I like to serve this as a sharing starter… Guinness treacle brown bread sliced on a wooden board, alongside a platter of the smoked salmon with wedges of lemons and the bowl of aioli.
