Clodagh's Christmas Cake is a festive, rich fruit cake brimming with currants, sultanas, raisins, and glacé cherries, all soaked in brandy for a deeply aromatic flavor. Brown sugar, unsalted butter, and eggs lend a moist, tender crumb, while blanched almonds add a delightful texture. Mixed candied peel, black treacle, fresh lemon and orange zest, and a hint of nutmeg and mixed spice bring warmth and complexity to each bite.
