If you grow your own vegetables, you probably grow spinach and therefore have an abundance of it for a lot of the year! This is one of my favourite dishes to make when I want an easy warming bowl for supper and it is made with storecupboard staples – red lentils, chickpeas and coconut milk, and a few simple spices. If it starts to get a bit dry, add in hot vegetable stock or water.
