Sausage, Herb And Apple Stuffing
INGREDIENTS:
100g butter
2 onions, peeled and finely chopped
2 apples, quartered, cored and chopped into 1-inch pieces
400g pork sausage meat
200 g fresh white breadcrumbs
1 tbsp fresh thyme, finely chopped
1 tbsp fresh flat leaf parsley, finely chopped
½ tsp fresh nutmeg, grated
sea salt and freshly ground black pepper
METHOD:
Make the stuffing by placing a saucepan over a medium heat and melting the butter. Then stir in the onions and apples and cover to sweat for two minutes. Then remove from the saucepan and allow to cool.
Once the apples and onions have cooled, place them in a large mixing bowl, and stir in the pork sausage meat, breadcrumbs, thyme, parsley, nutmeg and season with sea salt and freshly ground black pepper. Mix well, making sure all the ingredients are mixed throughout the pork sausage meat.
