Honey Pear Salad With Rosemary and Orange Whipped Blue Cheese

INGREDIENTS
1 large ripe pear, quartered, cored and sliced
1 dstsp honey
80g gorgonzola
½ tbsp fresh rosemary, finely chopped
Zest of 1 orange
Radicchio leaves
40g pistachios, chopped
For the dressing
1 tbsp balsamic vinegar
2 tbsp olive oil
1 tsp honey
Sea salt and freshly ground black pepper
METHOD
Pre-heat the oven to 180C fan.
Place the thinly sliced onions and sliced pears on a baking tray, and drizzle with olive oil and one dessertspoon of honey. Place in the oven to roast for 10 minutes.
In a small bowl whisk together the gorgonzola, chopped rosemary and zest of orange.
Assemble the radicchio leaves amongst 2 plates, and divide the roasted red onions and pears on top of the leaves. Spoon the whipped gorgonzola, rosemary and orange on top of the figs, followed by the chopped pistacchios.
Whisk together all the ingredients for the dressing, and drizzle over the salad, and lastly a good twist of freshly ground black pepper.
